I've been having strong food cravings lately, maybe because I've been having to deprive myself of many foods over the past month. But as I had an intense craving for sushi yesterday, I likewise had a massive craving for noodle soup today. I'd typically go for the really savoury soups, like ramen or Malay laksa or curry pho. But I have to eat more "plain" foods now with less sodium, less cholesterol, and less sugar. So I went for lunch with my mom at Chef Papa Noodle Bar today to make our own custom noodle soup. In today's bowl: rice vermicelli noodles in the original Japanese-style fish broth with beancurd roll, prince mushrooms, napa cabbage, white fish balls, Chef Papa's signature fish puffs, and bok choy. Not as satisfying as my go-to Malay laksa, but it was actually really, really tasty, which makes me question if it's really that much healthier... but hey, at least I tried.
