Garlicky shrimp with roasted potatoes and walnut-parsley pesto

Tonight's dinner kit from Hello Fresh: Garlicky shrimp with roasted potatoes and walnut-parsley pesto. You really can't go wrong with garlic shrimp and roasted potatoes, but just like the Mediterranean gnocchi I had last week, they just did not go well with cold salad. I've realized I'm not a fan of mixing hot and cold food in a single dish. It really felt like it should've been two separate entities. So, with that, I've learned something new about myself: I don't like warm salads. (Unless it's warm potato salad. That shit is awesome.)

Mediterranean gnocchi with bocconcini and oregano

Tonight's dinner from Hello Fresh: Mediterranean gnocchi with bocconcini and oregano. In an attempt to be healthier, I decided to choose a vegetarian "pasta salad" for one of my kits this week. And with gnocchi, bocconcini, and feta, I thought it would be amazing. (I substituted cucumbers for spinach because a) my spinach wilted, and b) cucumber adds a nice crunch.) But still, the whole dish just wasn't cohesive. The gnocchi is warm, pan-fried, and buttery, and the salad is cold and briny — great as separate entities but took away the best parts of each other once they were tossed together. I would totally make it again, but with the gnocchi as one dish and the salad as its own separate dish. As they should be.

I never thought I would say this, but I had a salad for cheat day. It's Taylor Farms' Buffalo Blue Chopped Salad Kit, which has romaine lettuce, red and savoy cabbage, broccoli, and carrots — it sounds healthy, but it also comes with buffalo seasoned crouton crumbles, blue cheese, and buffalo ranch dressing, which is what makes it gloriously fattening and delicious and totally appropriate for cheat day. For some reason, it doesn't show up on their website (maybe the fat and calorie intake is too shocking for a salad — 130 calories and 9 grams of fat for 1 cup, in case you're curious), but it's available at Costco and it's basically my new favourite thing.
