Cooking at Home: Canada Day Dinner with Corn & Blueberry Salad with Feta and Hawaiian Pulled Pork Sliders

My friends Chelsea and Braden invited me over to their house for a little pre-Canada Day dinner:

Not sure where they get their recipes, but this dinner was amazing. Sweet and savoury, fresh and refreshing — the perfect choices for a summer meal. We did agree that a second side like sweet potato fries would've made the dinner even better, but what calories and fat grams we saved on that went to dessert at Chocolate & Company (riding on the theme of summer, I got black currant sorbetto and coconut gelato, my new favourite combo), the perfect ending to an incredible dinner.

The BBQ madness continues as my friends Minji and Daniel hosted a Canada Day BBQ for seven of us today. I think this may win as the biggest, most epic BBQ I've ever been to:

I ate enough for three people. We started grilling at 4:00PM and just kept going until 9:00PM. That doesn't even include the ice cream sandwiches we had after we lit up 20 sparklers. Or the homemade peach sorbet (they just got an ice cream maker) we had while playing Deception: Murder in Hong Kong. Basically, this was the best Canada Day, ever.

Went over to Chelsea and Braden's and had ourselves a little Canada Day weekend BBQ:

On the menu: Cheeseburgers, potato wedges, Caesar salad, and cabbage and feta salad. And for dessert, Braden's mom made pavlova! It was my first time having it, and I can't believe it took me this long to try it? Like, I know it's only meringue, whipped cream, and strawberries, but it was so freaking good, I had to go for seconds. In fact, everyone had seconds, and I don't think I've ever seen a cake eaten that fast.

Anyway, I hope my fellow Canadians have a wonderful Canada Day long weekend!

Cooked the last kit from my first Hello Fresh box for tonight's (and tomorrow's) dinner: Prime rib cheeseburgers with grilled onion jam and herby garlic hash. Okay, so when I was picking out my meals for this box, I totally did not read that this recipe requires a grill, which I definitely do not have. So I had to make quite a few adjustments, with cooking the burgers in a frying pan and the onion jam and the hash in the convection oven. Which, of course, doubled the cooking time. So I was kinda mad at myself the entire time for not realizing before ordering that this recipe uses only a grill for cooking.

Still, the burgers still came out INSANELY GOOD — ultra flavourful and juicy, almost melt-in-your-mouth — especially with the balsamic onion jam, which adds an amazing, sweet, tangy dimension to the beef. The hash could've been excellent except that the veggies were super undercooked in the convection oven and I am not into crunchy potatoes, so it actually ended up taking 40 minutes in the oven and then 5 minutes in the microwave (because I am impatient and said, "FUCK IT, MICROWAVE TO THE RESCUE") to make them soft. (At least I learned what thyme tastes like. And looks like. I guess I have just never needed to use thyme. Or any other herb that isn't already in a bottle. Oh, and I cut a bell pepper for the first time in my life! Look at me becoming a chef!) 

Thus, I have learned my lesson. I will be more vigilant in reading the recipes when choosing my Hello Fresh meals. And also, I bought an adorable, single-serving grill from Amazon. For all my future grilling-in-an-apartment needs.

And that, friends, is how I spent my stat day off. HAPPY CANADA DAY!!!

Happy Canada Day! I am working from 4:00 to midnight as usual (at least I get time-and-a-half) so I am just celebrating today (as with every first day of the month) by flipping my BTS calendars to the new month. (I just realized that I've just celebrated every previous Canada Day by getting pizza, so I don't even feel too bad this year. I mean, I get enough pizza as it is.)

Spent the day doing chores, you know, cleaning the bathroom, vacumming the house, doing laundry. And then took an hour-long walk outside to get some exercise in. So obviously, I deserve pizza. Half supreme (pepperoni, mushrooms, green peppers), and half Hawaiian in honour of Canada Day. (Yes, Hawaiian pizza was invented in Canada.) Also 'cause I am totally one of those people who love pineapple on pizza. (Weirdly enough, I know more people who like pineapple on pizza here than people who don't. Guess it's really a Canadian thing.) Happy Canada Day! 🇨🇦🍕🇨🇦🍕🇨🇦

Happy Canada Day! As there is a heatwave this weekend, I decided to hibernate. So instead of celebrating outside with fireworks and BBQ, I celebrated inside with pizza and air conditioning. But I did get half Hawaiian because I thought I should be more Canadian today. (Contrary to popular belief, Hawaiian pizza was invented by a Canadian in Canada. And yes, I like pineapples on pizza.)
